I just found word from dictionary and now know what it means. But still doesn't understand what 'humble' does.

IMHO- In My Humble/Honest/Modest/Un-vain Opinion. Really, it isn't that hard, 486... maybe once you graduate from 6th grade you'll understand...

Well, it looks like first we'll have to teach you the difference between an adjective and a verb before we move on to big words like 'humble'...

Why to use that word? Phrase fullfills it's purpose without it.

Your right the phrase "in my opinion" would be sufficient enough, but the reason it is added is the same reason why people say good-bye instead of bye. There either trying to be polite, or picked it up from habit.
