PC Educational Kids Game series

Hello! I've been trying to find this game from my childhood for AGES. What I know is:

-It was a PC series and I owned at least 2 in the series
-One had a minigame where sub sandwiches were on a conveyer belt, it was in a factory, had something to do with letters, and there was a like fat factory worker in it
-The main mascot was this like tiny old man who looked like a teacher/scientist and had a wide head
-There was a volcano in the world and something to do with collecting gems
-There was a segment where the lullaby "All the Pretty Little Horses" would play

That's all I can remember right now. I know I used to play this game OFTEN and yet have been completely unable to find it again!! Anyone have any ideas?
