First person shooter, had to cut off a character's ear, 1994-1999 [Strife]

This was a first-person shooter, and in one of the early levels the objective was to cut off another character's ear. I recall your character saying "I'm all ears" as the level started.

In a later level, you had to break into a jail, and I recall your character saying "I never thought I'd have to break IN to jail".

Release date was circa 1994 - 1999.
