For WYSIWYG screenies:
http://www.irfanview.com/
Excellent program, freeware, USB portable( Read the FAQ).
Tab -> 'options' -> Capture screenshot -> etcetera, self explaining stuff.

Videos: Dosbox can make video captures now.
I've never used it t'll now, so can't say much about it.
CTRL+something, it's in the readme.* I'm too lazy to look it up, sorry.

You can also just hit PrintScreen and paste it into Photoshop/whatever to take screenshots. Rather low tech but that's what I usually do. If you need to capture from pure DOS, try Screen Thief for DOS:

For video, first make sure you have installed the proper codec for DOSBox. In your Start Menu in the DOSBox folder there should be a "Video" folder with a "Install video codec" option. Do that. Then when DOSBox is running press Ctrl-Alt-F5 to start recording and press it again to stop recording.

There should be a link in your Start Menu -> DOSBox folder to a "capture" folder, they'll be in there ...

It'll point to, for example, C:\Program Files\DOSBox-0.72\capture
